Wilde Goat
Wilde Goat, styled after our popular Wilde Field, is made with a blend of our own Jersey cows' milk and Nubian goats' milk from Thomas Farm in Sunderland. Like her sister, this cheese is complex: pleasantly sharp & bright upfront, while the goat's milk brings a complexity reminiscent of deep mahogany and sweet butterscotch. Additional wheat and hay flavors, and hoppy notes from the IPA wash from our neighbors at Antimony Brewing in Lenox. Bound together with the essential ingredient of time, the texture has become that of a long-aged cheddar with a sticky, fudgey mouthfeel.
